Chili Lime Sweet Potato Fries

Delicious baked chili lime sweet potato fries are the perfect sweet and savory treat.

1 Medium sweet potato

Juice of 1/2 lime

1/2 Tbsp Maple syrup

1/2 Tbsp Olive oil

1 tsp Lime zest

1/2 tsp Cayenne pepper (for mild, more if you like it lots of heat)

1/4 tsp Salt

1 Tbsp Cornstarch


Preheat oven to 450 and line baking sheet(s) with parchment paper.

Cut potatoes into french-fry sized strips.

Transfer to large bowl and add lime juice, maple, oil, lime zest, cayenne and salt. Toss to coat.

Add cornstarch and toss some more to coat. (No biggie if it doesn't dissolve al the way.)

Arrange sweet potatoes in a single layer on baking sheet(s). Bake 15 minutes, then flip and bake another 10-15 minutes, or to desired crispness.

I like to use a french fry cutter, but you can easily enough use a sharp chefs knife. If you don't have parchment paper, you can sub aluminum foil, but make sure you give it a good shot of non-stick spray or else the syrup is going to glue itself to the foil.
